Summer weeknights can get pretty busy and very hot.  The last thing I want to do is spend my time in the kitchen boiling water, making the house even hotter.  I have been experimenting with different ways to cook my favorite summer time vegetable…. CORN on the COB…in a short amount of time and that is in the Microwave!  

You are probably saying to yourself… “The Microwave?? Gross!!”  You are surely wrong!  I couldn’t believe it myself.  A large ear of corn can be placed in the microwave for 4 mins and come out delicious.  It’s so EASY and SIMPLE!

Here are the steps…

          1.) Place the ear of corn in the microwave husk and all.  DO NOT SHUCK IT! You will see why                         later.

           2.)  Microwave the ear of corn for 4 mins.  If a thinner ear of corn 3 mins will be fine.
           3.) Take the ear of corn out of the microwave with a potholder.  It will be very hot!  Place on the                          cutting board. 

         4.) Hold the silk side (top                    side) of the ear with the                pot holder or cloth if                      still hot and with a                          sharp knife cut the end                  of the ear about an inch                up

          5.) You are then going to hold the ear up with the pot holder or cloth if the corn is still hot and                       squeeze the corn out of the husk. When the corn gets about ½ way out pull on the ear of                           corn.

What if I want more than one ear of corn?

Cooking multiple ears of corn is simple.

2 ears of corn  – 6 minutes (reduce by 2 minutes for thin ears)

3 ears of corn  –  8 minutes (reduce by 2 minutes for thin ears)

4 ears of corn  – 10 minutes  (reduce by 3 minutes for thin ears) Please Note: I don’t suggest cooking more than 4 ears of corn at a time.

How do you know if your corn is done?

The easiest way to check for cooked corn is to peel back the husk about 2 inches and check your corn kernels by poking it with a sharp knife or fork.
